Nectarine Overnight Oats

About the Recipe

I am currently obsessed with overnight oats! Well… I have always been obsessed with oats but in the warmer months the last thing I want to do is cook up a big bowl of porridge. If you like nectarines then these overnight oats are definitely for you. It’s sweet, creamy and super filling! It's the perfect summer breakfast in my opinion as it's even better as all of the prep is done the night before, meaning in the morning you can just grab your oats and go!


As I mentioned in my previous mango overnight oats recipe, I have currently been returning to the office after two years of working from home. Overnight oats have become a go-to breakfast as it allowed me to eat something healthy and filling each morning without any hands-on prep in the morning. I can just put my overnight oats in my bag and begin my day! You can even make these oats the day of eating them as they technically only need around 2 hours in the fridge, however, leaving them overnight allows for maximum creaminess.


Oats are one of my favourite breakfasts for a few reasons: they are a great source of fibre which helps to keep you full all day long, they also contain lots of essential vitamins and antioxidants and best of all they are super versatile meaning you can flavour them up however you want! In this recipe, the oats are naturally sweetened with the nectarine as well as some additional flavour in the form of cinnamon and vanilla extract. They are also mixed with chia seeds and some plant-based Greek-style yoghurt. This also helps to add a fair amount of protein to the overnight oats which will help keep you full until lunchtime.


If you don’t have nectarines you can of course sub for peaches and these oats will be just as delicious, I am just not the biggest fan of the fuzzy peach skin! I think you could also try these overnight oats with other types of stone fruits like apricots or plums. Let me know if you try any of these!

I like to finish off my overnight oats with the rest of the nectarine, a little more yoghourt and a drizzle of peanut butter! They are a satisfying and delicious breakfast for those busy mornings!

Ingredients

  • 1 Ripe Nectarine, half chopped roughly the other half diced


  • ½ Cup of Non-Dairy Milk (I went for Almond)


  • 1/2 Tsp Cinnamon


  • 1/2 Tsp Vanilla Extract


  • A Pinch of Salt


  • 1/2 Cup Rolled Oats (ensure GF if required)


  • 1/2 Tbsp Chia Seeds


  • 1/4 Cup Plant Based Greek Style Yogurt


For Serving


  • More Plant-Based Yogurt


  • Leftover Necarine Chunks and/or Berries!


  • Chopped Nuts or Nut butter (I went for peanut - my favourite!)

Method

1. To a blender add the roughly chopped half of the nectarine, cinnamon, vanilla extract, non-dairy milk and a pinch of salt. Blend until smooth to create the nectarine-milk!


2. In a bowl, mix the rolled oats and chia seeds, add in your nectarine-milk and yoghurt and mix until combined. Cover and set in the fridge for at least 2 hours, or overnight.


3. When ready to serve, top with additional yoghurt, chunks of nectarine or berries (I had some strawberries which I added) and nut butter! Leftovers will keep in the fridge for up to 5 days, which makes this a great recipe to prepare for the whole week. However, be aware that the oats continue to soften the longer they are left.

Recipe Notes

STORAGE: Keep in a sealed container in the fridge for up to 5 days, personally I only like leaving this for 2 days max as I find it gets too soft after that for my liking!
